Watch the boost guage (although not perfectly accurate) to see where the boost begins and how high it goes. A turbo engine will not have "break away" power until it is into the turbo's boost range. Remember that a stock turbo automatic Z has been "detuned" by Nissan vis-a-vis a 5-speed car with the same engine. If I remember correctly, it has 285 HP vs 300 with the manual transmission. Also, I concur that you will not hear the stock turbos. From experience (an expensive teacher), I have learned that the seals can go bad on the turbos of a low mileage car that has not been driven much. If you have the time, and the owner will let you, let the car sit for a couple of days and then have him/her start it while you watch the exhaust for blue smoke. Let it warm up and then have him/her QUICKLY drive it away from you while you once again look for the telltale smoke.
